Red Bean Soup 紅豆沙

Red Bean Soup
Ingredients for 4 servings
  • 1 cup red beans
  • 120g rock sugars
  • 4 cups of water
Preparation
  • Wash the red beans, and soak it in the water overnight.
  • Drain the beans before cooking.
  • In a big pot, cook the beans and water until boiling.
  • Reduce the heat, cook the soup until the beans are soft and creamy, stirring occasionally. (around 1 hours)
  • Add the sugar and continue to cook. (around 15 minutes)
Mini Tips:  In Hong Kong, we usually add dried mandarin peels for favouring. If it is hard for you to find, adding fresh orange peels before serving also provide a very fresh taste.


Sweet soups are chinese desserts, we always eat it after dinner.
