Chocolate Crispy Squares 朱古力脆米方塊

Chocolate Crispy Squares
Ingredients for 20 servings
  • 1 box (200g) Kellogg's rice krispies
  • 200g milk chocolate
  • 100g diced almonds
  • 4 tablespoons golden syrup
  • icing sugar, for dusting
Preparation
  • Prepare a square tin, pour in rice krispies and set aside.
  • In a frying pan, fry the almonds to fragrant, then mix with the rice krispies.
  • Break the chocolate and add golden syrup into a bowl.
  • Heat water in a soup pot, rest the bowl over it and leave until chocolate melt, stir frequently.
  • Pour the melted chocolate syrup into the rice krispies, mix well all ingredients and press down firmly. 
  • Chill the chocolate loaf in refrigerator for half hour. To serve, turn the loaf on a cutting board and cut into square. Dust with icing sugar. Kids love "Chocolate Crispy Squares", and it is an excellent party snack.

Sago soup with coconut milk 椰汁西米露


Sago soup with coconut milk
Ingredients for 3 servings
  • 2/3 cup (100g) big sago
  • 50g yellow rock sugar
  • 165ml coconut milk
  • 330ml full milk
Preparation

  • Prepare a soup pot with boiling water, add sago and boil for few minutes. Reduce to medium heat and cook for 1hr, stir occasionally.
  • When the surrounding of sago become translucent, and water become turbid, pour the sago into a colander and rinse under tap water.
  • Prepare a new pot of boiling water, pour the sago back to the pot, cook in medium heat for another 1hr. Until the center of the sago remain small part of white. Repeat the rinse water step.
  • Add milk, coconut milk and sugar into the pot and bring to boil. Pour in the sago after sugar is dissolved. The Sweet soup "Sago soup with coconut milk" is finished. Serve hot or cold.

Mini Tips:
  • Cooking the sago with a bigger soup pot and more water to allow more space for the sago. It can  reduce the chance of burning.
  • Some recipes suggest soak the sago in cold water before cooking. This is very depend on the texture of the sago as some sago will melt in cold water. Cooking the sago directly in hot water is easier to handle.
  • Cooking big sago takes longer time, if the sago still not done after cooking twice, then you may need to cook one more time.

Sweet and Sour Pork 生炒排骨


Sweet and Sour Pork
Ingredients for 2 Servings
  • 200g Pork ribs
  • Seasonings: 1/2 teaspoon sugar, 1/4 teaspoon corn starch, 1/2 teaspoon soy sauce, 1/2 teaspoon rice wine, a pinch of salt
  • 1/2 red, yellow and green bell peppers
  • 1/2 onion
  • sweet and sour sauce: 1/4 slab cane sugar, 2 tablespoons ketchup, 2 tablespoons white vinegar , 1 tablespoon warm water
  • Finishing: 1/2 teaspoon cornstarch, 1 tablespoon water
  • For deep fry: 1 cup vegetable oil
  • For batter: 4 tablespoons corn starch
Preparation



  • Wash the pork ribs and cut into cubes. Marinade with seasoning ingredients for 30 min.
  • Remove bell peppers's ribs and seeds, then cut into cubes. Peel onions and slice into strips.
  • Break cane sugars into small pieces and dissolve with warm water.
  • Preheat oil in a saucepan.
  • Sprinkle corn starch on a small plate. Roll on the porks until coated evenly. Then deep fry the pork in hot oil until golden brown. Set it on kitchen papers to absorb excess oil.
  • Heat oil in another frying pan, add bell peppers and onions, stir fry for few minutes and set on a plate.
  • Pour in sweet and sour sauce ingredients in to the pan, taste and adjust the source if desired, then add finishing to thicken the sauce.
  • All ingredients return to pan, stir fry and mix well. The delicious sweet and Sour Pork is done, better serve with white rice. Enjoy!

Mini Tips: 
The purpose of "Finishing" is thicken and smoothen the sauce. Infact, the corn starch would not dissolve in water naturally. I use my fingers to stir away the lumps in the corn starch water, stirring and pouring it into the pan at the same time. Then the finished sauce will be silky smooth.

Fry Rice Noodles with Bell Peppers 三色椒炒米粉


Fry Rice Noodles with Bell Peppers
Ingredient for 2 servings
  • 200g rice noodle
  • 1/2 red, yellow and green bell peppers
  • 2 eggs
  • 1 tablespoon soy sauce
  • a pinch of salt
Preparation
  • In a soup pot, cook the rice noodles in boiling water until soft. Pour the cooked noodles into a colander and rinse under cold running water. Drain the excess water and set aside.
  • Remove bell peppers's ribs and seeds, then slice into strips.
  • Beat the eggs and season with salts.
  • Heat oil in a non stick pan, fry the eggs until hard, take it out from the pan and slice into strips.
  • Add ~1/2 tablespoon oil into the pan, stir fry the bell peppers first, then add rice noodles, eggs and soy sauce. Keep stir frying and loosen the noodles. Mix well all the ingredients and it is ready to serve.

The colourful bell peppers are a good source of vitamin C, thiamine, vitamin B6, beta carotene, and folic acid.  


Mini Tips:
  • After rinsed the noodles, use your hand to loosen the noodles and drain away all the excess water. It is very important that the fry noodles cannot be watery.
  • If the noodles are too sticky, you may need to add more oil when stir frying.

Rice Balls in Sweet Soup 糖心湯丸, 花生湯丸

Rice Balls in Sweet Soup
Ingredients: ~ 10-12 rice balls
  • 2/3 cup glutinous rice flour
  • 1/4 cup water
  • 1, 1/4 pieces raw slab cane sugar
  • 1 tablespoon crunchy peanut butter
  • few pieces of ginger
Preparations
  • In a soup pot, add 4 cups of water, 1 piece of cane sugar, ginger and bring to boil.
  • Smash 1/4 piece of cane sugar in a bowl and set aside.
  • Put the glutinous rice flour in a big bowl, add water gradually and knead the flour into dough. The dough should not sticking your hands and not easy to disperse.
  • Sprinkle the glutinous rice flour on a plate and pat into your palms, pick a small piece of dough and roll into ball (diameter ~3cm), then press flat with your palms.
  • For rice balls with sugar fillings: put a small piece of broken sugar on the dough centre, close the surrounding and roll into ball, set it on the plate.
  • For rice balls with peanut fillings: same as above, with fillings of sugar plus peanut butter
  • Put the rice balls into the boiling soup. When the rice balls are done, it will float on the soup. Enjoy!

Mini Tips: If this is your first time, try the raw slab sugar first. Because peanut butter is easily stick with the dough. If the dough is too thin or going to leak, try sticking a little bit of the unused dough on top of it.

Steamed Tofu with Soy Sauce 清蒸豆腐

Ingredients for 2 servings
  • 1 piece of tofu, ~ 400g, slice into pieces and place it on a plate
  • 1 spring onion,  ~20g, thinly sliced
  • 4-5 gloves of garlic, ~20g, thinly sliced
  • 1 teaspoon of vegetable oil
  • 1/2 teaspoon sesame oil
  • 1 tablespoon soy sauce
Preparation
  • Prepare a pot with lid, put a steamer basket inside and boil 2 cups of water.
  • Once the water start to boil, put the plate of tofu on the steamer, cover the lid and cook for 10 minutes.
  • In a frying pan, heat the vegetable oil, add the garlic and stir fry until golden brown.
  • Add spring onions, soy sauce and sesame oil,  stir fry 1 more minute and turn off the heat.
  • Take the tofu out from the steamer, drain half of the steam water from the plate.
  • Pour over the sauce on the steamed Tofu and it is ready to serve.

Soya Milk
Ingredients for 2.5 Liter
  • 600g soya beans
  • 12 cups water
  • 250g rock sugars
  • 1 big cheesecloth or muslin bag
Preparation
  • Wash the beans briefly and soak the beans overnight.
  • Drain the beans, pour water and beans into a food processor in ratio 2:1. Blend the beans into puree texture, then pour the mixture into a big soup pot. You need to repeat this step around 4-5 times.
  • Heat the soup pot and add the remaining water, bring to boil. Keep stirring to prevent burning.
  • Reduce to medium heat, simmer the mixture for 15 mins, keep stirring.
  • Prepare a big deep bowl, place to muslin bag on the top, pour the mixture into it, collect the soya milk and squeeze the remaining from the bag.
  • Add rock sugars into the soya milk, you may serve it warm or save it into a fridge.
